At Mandarin Oriental, Geneva Rasoi by Vineet, the first fine dining restaurant in Geneva to offer contemporary Indian cuisine, also maintained its coveted one star status in Michelin’s 2014 Guide for Switzerland. In Munich, Restaurant Mark’s under the direction of Executive Chef Simon Larese, also retained its one Michelin star status.

Finally, at Mandarin Oriental, TokyoSignature serving contemporary French cuisine maintained its single star status for the seventh time, and Sense, featuring contemporary Cantonese cuisine set against the city’s dramatic skyline, achieved one-star Michelin status.

CHEF HACHE was determined to become a chef from a very young age, influenced by his grandmother who cooked for a family-run guesthouse and encouraged by his father who ran a restaurant in the Parisian suburbs. After receiving rigorous academic training in culinary techniques, he began his career working with some of the most outstanding French Michelin-starred chefs, including ERIC BRIFFARD, ALAIN SENDERENS, ERIC FRÉCHON and FRÉDÉRIC ROBERT.

Whilst learning the fundamentals of fine cooking from Chef Eric Briffard at the ELYSÉES DU VERNET, he was inspired by the top-quality, highly creative cuisine served at PALACE DE LA MADELEINE under the reins of Chef Alain Senderens. Later with Chef Eric Fréchon’s team, where his skills were further enhanced, he participated in the tremendous challenge of earning a third Michelin star at LE BRISTOL PARIS. Most recently, he worked alongside Chef Frédéric Robert at the GRANDE CASCADE where he took charge of banquet menus and restaurant development, as well as learnt about management and essentials of profitability.

With his exquisite and diversified culinary creations that have constantly won applause from the most discerning diners, Christopher Hache was only 28 years old when appointed as Head Chef of the centuries-old Hôtel de Crillon. Executive Chef and F&B Director for Mandarin Oriental, Paris, Thierry Marx supervises the hotel’s two restaurants, Bar 8, the Room Service, the Cake Shop and catering for events. One of France’s most distinguished chefs, Thierry Marx trained in some of the country’s best restaurants including Ledoyen, Taillevent and Robuchon. He was awarded his first Michelin star in 1988 at Roc en Val in Tours, and another at Cheval Blanc in Nîmes in 1991. He spent ten years at Château Cordeillan-Bages, a Relais & Châteaux in Gironde, where he held two Michelin stars since 1999. In 2006, Thierry Marx was elected Chef of the Year by Le Chef Magazine as well as by the GaultMillau guide.

In his role as Executive Chef at Mandarin Oriental, Paris, he is responsible for creating unforgettable and very different experiences for each of the restaurants, with menus which have been crafted over for months in his Paris Food Lab. An aesthete with an eye for detail, Thierry Marx also worked closely with Agence Jouin-Manku to create an exclusive dinner service for Sur Mesure par Thierry Marx, the hotel’s gastronomic restaurant.
